I LOVE banana bread thanks to my wonderful mother, who has showed me a recipe to make it a little healthier but still delicious! If you love banana bread AND chocolate but want a lighter recipe, this is for YOU. The greek yogurt still makes it soft and and the ripened bananas make it super sweet (along with the maple syrup of course!). If you feel like 1/2 cup of maple syrup is a bit much, try just 1/4 cup or 1/2 cup Splenda or alternative sweetener. Gluten free? Try using coconut flour- equally delicious!

what you need:

•2 Eggs

• 3/4 tsp. vanilla

•1/2 cup of plain greek yogurt

•2 ripe bananas, mashed

•1/2 cup maple syrup

•3/4 tsp. baking soda

•1 1/2 cup whole wheat flour

•2/3 cup dark chocolate chips (Optional) I use my fav Ghirardelli dark chocolate chips

Preheat over to 350 degrees


Mix 2 eggs, 3/4 tsp. vanilla and 1/2 plain greek yogurt together until smooth

•Mash up 2 ripe bananas and add those and 1/2 cup maple syrup to blended yogurt and egg mix. Blend together.
•Add 3/4 tsp baking soda and 1 1/2 cup whole wheat flour together and mix. Make sure not to over mix- mix just enough to get everything blended together.
•Add in dark chocolate chips and stir in with wooden spoon.

Pour in to greased bread pan (you can use coconut oil to grease the pan).

Bake at 350 degrees for 35-45 minutes or until a toothpick inserted into the middle comes out clean.

Let cool and top with peanut butter, honey, almond butter- you name it! I am in love with this Wild Friends Honey Peanut Butter with Crunch Pretzel Bites. I got it at Home Goods for $5 but you can find it at places like Fresh Thyme and Whole Foods.
