10-Min Breakfast Sandwich
I’m all about breakfast. In fact, if I had to choose only one meal a day, I would definitely choose breakfast. I’ve always been a big fan of breakfast foods and will literally get up 10 minutes earlier so I can make a (usually) nutritious breakfast that will keep me full all morning and sometimes later if I have class, work, etc. I have always been an oatmeal fan but lately have been branching out and trying a few different things! I’ve been experimenting with different types bagel breakfast sandwiches and wanted to share this one with you all.
I know, I know. Bagels? Yeah right, Haley, so many carbs! Well, let’s remember that carbs are NOT always bad. Carbs that come from wheat bagels, wheat pasta, and fruits and veggies are good for you and also essential to a healthy and balanced diet. Just try and avoid a lot of processed carbs (think: white pasta, white bread, cookies, cakes, candy, etc). Carbs are what gives you vital energy you need to go about your day, so don’t be afraid to eat them. 🙂 Plus, a life without any carbs is boring and who wants boring?
I give you, the 10-minute breakfast sandwich….
- 1 Stone ground wheat bagel (Trader Joe’s)
- 1 egg
- 1 tablespoon EEOV (extra virgin olive oil- I’ll usually just refer to it as EEOV for short 🙂
- Garlic Salt
- Sliced Black Forest Ham (or turkey)
- Handful of Spinach
- ½ Avocado
Heat up some EEOV and add the spinach. Let it sit and sauté for a few minutes in the oil. Add garlic salt and pepper. Then add in one mixed egg in and scramble with sautéed spinach.
Slice up the avocado into pieces and place on the 1/2 of toasted bagel.
Add ham next and then scrambled egg and spinach combo on top. Slice in half.
Easy, delicious, and easy to eat on the go! Enjoy!
